Harvested at the peak of flavor from October to January, with a delightful “mitaca” harvest from April to June, our beans are handpicked by dedicated small producers. They take pride in processing their coffee at their own micro-wet mills, ensuring quality and care at every step. After processing, the beans are gently dried on elevated tables in solar dryers, offering protection from the elements while enhancing their natural flavors.
