The secret to all dark roasted coffees lies on the bean. The intensity of the Italian Roast requires no less than high-grown beans, ideally those cultivated more than 4,500 metres above sea level. Beans cultivated at such a height matures at a slower rate, becoming harder, denser, and packed with more flavors - perfect for enduring the heat and the length of the roasting process.
